 Abstract: The dehydrating characteristics of Momordica Charantia L. during microwave drying process were studied by the single factor experiments including microwave power, section thickness and sample load. The drying technics conditions were optimized by response surface analysis at three factors and three levels when guided by integrated indicator of dehydration rate, electricity consumption and sensory quality, and the corresponding regression model was established. The results showed that microwave power and sample load had significant influences on the dehydration rate, the sample load had significant influences on the electricity consumption, and the microwave power had extremely significant influences on the sensory quality. When drying processing conditions of Momordica Charantia L. were as follows: microwave power was 480 W, section thickness was 0.59 cm and sample load was 62.86 g, the dehydration rate was 3.08 g/min, the electricity consumption was 2.38 kW·h/kg and the sensory quality was 9.33.

 Abstract:  Compared with the convective air drying, the drying capacity, energy consumption, sensory quality, vitamin C content and scanning electron microscope of apple slices by microwave vacuum drying and puffing were analyzed systematically. The experimental results showed that, compared with the convective air drying, drying capacity of microwave vacuum was increased by 48.46% and energy consumption per kilogram water was decreased by 32.32%. The apple slices had better texture and flavor, more honeycomb network structure and larger pores, and the reservation rate of vitamin C content was 15.8% higher than that of air dried.

 Abstract:  The change law of reaction dynamics was experimental studied through adding Vc to lotus root polyphenol-oxidase and dealing with lotus root polyphenol-oxidase (PPO) by magnetic field. The experimental results indicated that the reaction kinetic of enzymatic browning was accordant with Michaelis equation with catechol substrate, which Km and Vmax were 0.775 mol/L and 11.150 U/min respectively. Vc had an inhibiting effect on lotus root PPO, which Km and Vmax were 0.081 mol/L and 3.243 U/min respectively. The browning was lagged and the lag time increased gradually with the rise in the concentration of the inhibitors, which was an anticompetitive inhibition. The PPO activity expressed a fluctuation at different magnetic field strengths and times. At 3.17 A/m magnetic field strength for 4 hours, the reaction kinetics curve was a wave-type curve. The kinetic equations were established respectively.

 Abstract:  For the optimal activity of α-amylase from spent brewing grains (SBG) by Aspergillus oryzae NRRL 6270 in solid-state fermentation (SSF), the optimization of three parameters (fermentation temperature, initial substrate moisture and inoculum size) was carried out using the Box-Benhnken response surface methodology (RSM). By analyzing the response surface plots, the optimum range of fermentation temperature, initial substrate moisture and inoculum size for obtaining over 6 342.60 U/g α-amylase activity were in 29.15-35°C, 68%-71.26% and 2.6 × 106-1.38 × 107 spores per gram dry substrate, respectively. By solving the regression equation and also by analyzing the response surface contour plots, the optimal process conditions were determined: under conditions of temperature, 32.96°C; initial substrate moisture, 71.04% and inoculum size, 1.0 × 107 spores per gram dry substrate, the prediction of α-amylase activity was 6581.63 U/g, the above conditions would be 32°C, 71% and 1.0 × 107 spores per gram dry substrate, respectively. In this situation, the maximum predicted α-amylase activity was 6 445 U/g. The experimental data under various conditions have validated the theoretical values.

 Abstract:  Using wheat starch as raw material, and thermostable α-amylase SPEZYME Fred as liquefacient, isomalto-oligosaccharide was prepared. The factors which affected liquefying of wheat starch were investigated by orthogonal tests. The results showed that the optimum condition was as follows: pH value was 5.6-5.8, the mass percent of starch pulp was 25%, liquefying temperature was 85°C, the usage quantity of SPEZYME Fred was 14 LU/g, liquefying time was 80 minutes. On this condition, DE value of liquefied solution was 15.62%. The topology nanostructure of starch pulp was researched by atomic force microscopy when the wheat starch was not liquefied and DE value of liquefied starch pulp was 7-9 and 11-13. Image evidence of starch granules' structure change was obtained. With the increase of liquefied degree, Starch granules were broken up gradually and became branch structure. These images proved that starch granules were composed of particle structures, amylose structures and amylopectin structures.

 Abstract:  To study the performances of the insulation and aeration system of the laboratory-scale aerobic composting reactor system and its effects on aerobic composting process, the hot water thermal insulating experiments in different initial temperatures and weights were carried out. To evaluate the thermal property of insulation cans of the reactors, as well as their ventilation performances at 5 unequal fluxes, in addition, fresh pig slurry and wheat straw aerobic composting were tested subsequently. The experimental results show that: the thermal property parameters UA of insulation cans of the reactors, where U is the overall heat transfer coefficient (kW/(m2·K)) and A is the heat transfer area (m2), has no significant difference, and the standard deviation (SD) and RSD of UA are 0.02 and 4.93% respectively; their ventilation performance has no significant difference, furthermore, for each flux of 0.2, 0.5, 1.0, 1.5 and 2.0 L/min, the aeration rate is almost equal; the core temperatures of composting of fresh pig slurry and wheat straw are typically undergone in turn a period of rapid temperature increase into the thermophilic range, a plateau region and a gradual return. The time of temperature remained above 50°C was 5.3, 6.0, 5.1 and 6.8 days respectively. Their volatile solid reduction rates are 18.1%, 13.3%, 15.8% and 15.2%.

 Abstract:  To improve the performance and accuracy of automatic guidance system with contact sensor, a guidance control system of tractor with two-level controller was designed for the maize stubble inter-row tracking operation. High level controller using fuzzy control algorithm was developed based on signal analysis of contact sensor. In fuzzy controller, the input was angle of feeler and the output was desired steering angle of front wheel. PID algorithm with nonlinear compensation was adopted as low level controller to implement tractor steering angle control, which took nonlinear of electrohydraulic system into consideration. The control algorithm was simulated with Matlab/Simulink tool and experimented by tractor guidance control system in stubble rows field. The results show that the response and stability of control algorithm are effective in auto-steering of tractor. The guidance accuracy of control system with two-level controller can meet the requirement of inter-row operation by 50 mm as maximal track error and 15 mm as average track error.

 Abstract:  An automatic control method was described for backward motions along rectilinear path of a tractor-trailer combination (TTC) using optimal control theory. Firstly, based on linearization kinematic equation, linear quadratic regulator (LQR) was designed using optimal control. Secondly, via the desired controller, the experiments were carried out in asphalt surfaced and a non-paving way respectively. The experimental results demonstrate that the control method can be successfully used for autonomous tractor-trailer combination along rectilinear path, and the vehicle velocity has a notable influence on the offset of TTC.

 Abstract:  The hyperspectral imaging technology was proposed to detect the subtle bruises on fruits. Apples were adopted as the experimental object. The apples' hyperspectral images between 500 nm and 900 nm wavelength were analyzed via the principal components analysis, and the feature images under 547 nm wavelength were selected to detect the bruises on apples. The asymmetric brightness of the images was eliminated with asymmetric second difference subsequently. Finally, the feature of bruise was extracted through appropriate image processing. The experimental results show that detecting subtle bruises on fruits on-line with hyperspectral imaging technology is realized and the accuracy is 88.57%.

 Abstract:  An identification method was developed to automatically identify mildewed peanuts based on computer image processing technology. Firstly, detecting the peanuts edges by gradient algorithms, the color image of peanut removed background could be obtained by mathematical morphology operating, filling and composing. And then the threshold values of H and S were used to identify the mildewed areas. Lastly, the mildewed grade was determined via the calculated mildewed area ratio. The experimental results showed that the accuracy rate of this identification method could be reached to 90%.

 Abstract:  In order to instantly acquire the information of hazard levels of plant diseases and pests, a method of segmentation of corn spot image based on RGB color model was proposed. The hazard levels of the whole plant could be calculated through hazard levels of the corn canopy acquired by the results of image segmentation. During the segmentation of crop leaf and disease spots, the method was separated into two steps: 1, R, G, B three components were gotten from RGB color images which were caught by numeral camera, and the corn leaves were segmented from the background of the 2G-R-B images by choosing threshold automatically via iterative method. 2, The disease spots were segmented from leaves based on R-G images. The results showed that the corn leaf blades and the sickness spots of the 30 images could be picked up except a few non-etiolation infection courts.

 Abstract:  For an incubation control system, which is multi-variable, strongly coupled, disturbed, and lagged largely, a hybrid intelligent control algorithm was proposed. The coupling of main parameters was decoupled by the former control, which used feed-forward decoupling algorithm. According to the difference of technological condition, the fuzzy-immune PID control algorithm or fuzzy control algorithm was selected subsequently. The temperature, humidity and oxygen content were controlled well by the hybrid intelligent control algorithm. The factual running results proved that the control algorithm of the incubation system is effective.

 Abstract:  A control system of precision water disperser on the walking-type irrigation was designed based on advanced RISC machine (ARM) and Linux. Finally, the purpose of precision water disperser was realized in precision agriculture.  Abstract:  A method for solving conflicts in multi-disciplinary design optimization was proposed. Nash game equilibrium theory was applied to model the relations between the design players, and the advantages were discussed respectively. This method allows that each discipline adopts its own design optimization technique, and then integrates within the frame of this method. At last, the validity of this method was proved via an experimental case. The results show that the method does not need systematic coordination, and the information communications among every discipline are convenient.

 Abstract:  The product model for conceptual design was built based on functionstructure relation. Firstly, the function model was established, in which the meta-function and input/output flow were modeled with the functional basis approach, and the dynamic behavior of input/output flow was described with the language of bond graph. Secondly, the structure model was established based on component-connector relation, in which physical hierarchy was described with undirected graph. Functional features were extracted subsequently, which consist of meta-function, flow object and relational constraints. The design concepts were generated by the decomposition of function and mapping between function and structure. Finally, a design case of transmission system was given to demonstrate the proposed model.

 Abstract:  A new selection method for ERP of manufacturing enterprise was developed. Firstly, an evaluation model of ERP selection process was established, and an evaluation system for ERP selection was constructed by using balanced score card (BSC). According to benchmarking principle, the referred series was obtained for ERP selection. All the relative weights were calculated based on the analytical hierarchy process (AHP) technique. Then, the priority scheduling of ERP software was realized via the grey relational theory. Finally, a practice example analysis was carried on. The results show that the method is comprehensive, practical and operational for ERP selection.

 Abstract:  A three-translation vibration reduction platform is designed using a 3-PUU parallel mechanism as main mechanisms, which is used to settle the question of multi-DOF vibration reduction. The 3-PUU parallel mechanism is analyzed on its kinematics, and the velocity formulas of poles and moving platform is deduced. The dynamics equation is established using Lagrange method, and the formula of free frequency is deduced according to modality analysis of general viscous damp. Instantaneous wallops are applied to X, Z dimension respectively, observing the movement of the moving platform, and use ADAMS software to validate the free frequency of the system. The result shows that accelerations of the vibration reduction system return nearby zero rapidly within 2 s, which has obvious effect of vibration reduction.

 Abstract:  Due to the complex geometry of free-form surfaces, generating paint gun optimization trajectories for free-form surfaces to satisfy paint thickness requirement is still a challenge. A quadratic function of the paint deposition rate on a plane was proposed according to the experimental data, and then a mathematical model of film thickness on a free-form surface was established. Instead of widely used parametric representation of surfaces, a planar facet scheme was used to obtain the painting surfaces approximately. A multi-objective constraint optimization problem was formulated for the trajectories optimization. An optimal tool trajectory with an optimal time and film quantity deviation was generated by the weighed ideal point approach. The generated trajectory was verified by the simulation results. The results show that the developed optimal tool planning algorithm can be applied to generate optimal tool trajectories.

 Abstract:  Based on the finite element software, a 3-D finite element model (FEM) of metal cutting was built. The cutting process of new-style Ti(C, N)-based nano-cermet cutter was simulated subsequently. Cutting force and toolwear were obtained as well as the distribution law of temperature. The optimum rake angle was calculated when cutting normalized 45# steel with Ti(C, N)-based nano-cermet cutter. The validity of the simulation results was demonstrated by a series of cutting tests. The simulation and experimental results show that 3-D simulation can disclose the cutting status more objectively than 2-D simulation, and it puts up a more effective method for research of metal cutting theory and development of new cutters.

 Abstract:  A three-axis micro CNC milling machine was developed for manufacturing mesoscale components and products, and the experiments of end-milling brass were performed on the developed machine. The experimental results show that: when the machined feature range is at mesoscale, the process phenomena and mechanical characteristics in milling operations can heavily differ from conventional scale milling due to the size effects; the relatively large ratios of cutting edge radius and spindle's runout to feed per tooth, which induce the intermittency of the chip formation at a low feedrate, have an important influence on the mesoscale milling mechanism and forces characteristics; the feed per tooth is not a constant in the given cutting condition, but a function of the spindle's runout, the minimum chip thickness and the cutting condition.

 Abstract:  There are three main problems in the conventional cold forging process of spur gear: insufficient corner filling; excessive forming force; short life of dies. To avoid these disadvantages, a new forming process, which is the two steps forming technology based on rigid parallel motion, is put forward. Firstly, finite element method is used to simulate the upend forging preformation and rigid parallel motive finish forging process, and equivalent stress field and load-stroke curve are investigated. Secondly, a corresponding experiment is done with pure lead to validate the numerical simulation. Finally, the conventional forging process is also simulated to compare with the new forming process. The results show that the two steps forming process is in favor of improvement of the corner filling condition and decreases the forming force significantly.

 Abstract:  According to the long cantilever and non-rigid characteristic of long cantilever coordinate measuring machine, the detailed analysis on the dynamic forces sources of the measuring machine was studied. The influences of the dynamic forces on the measuring error of CMM, and the additive dynamic error sources of the probe were investigated respectively. The conclusions that the additive dynamic error of the CMM probe had three-dimension character and the additive dynamic error in each dimension related to the vibration characteristic of the guide strip system were obtained. The mathematics model of vibration in the group system composed by the cantilever and the measuring staff was deduced subsequently. Based on the model, the corresponding means was adopted to control the vibration. The experimental results proved that the control means is valid and suitable.

 Abstract:  The uncertainty is a necessary part of the measurement results. Given the coordinate data and uncertainty of the measured discrete points, the computing procedure and method of uncertainty in straightness error assessment were discussed. In the study, the measured point coordinates were considered to conform to uniform distribution. Based on the decision rules of minimum condition, the uncertainty property of the reference line and its solution were proposed. Then the transmission formulas and computing method of uncertainty were given, and Monte Carlo method was applied to get the straightness error and uncertainty. Finally, an example was given to verify the method, and the non-uniform distribution of the measured points was discussed.

 Abstract:  Based on the theories of random process and reliability engineering, the treatment procedure of test data and the evaluation indices of reliability for vehicle products were analyzed. A method of model identification for failure distributions law of entire vehicle was proposed subsequently. In addition, how to determine the life-span of complex repairable system by using random process model was also introduced. Through analyzing a set of test data for a medium truck, it draws a conclusion that both the first failure mileage and the failure interval mileage are subjected to Weibull distribution. Finally, the expressions of reliability function and the evaluation values of reliability indices for this medium truck are listed.

 Abstract:  Laser shock peening is a technique similar to shot peening. Laser shock peening imparts compressive residual stresses in materials to improve the fatigue resistance. During a laser shock peening event, pressure well above the dynamic yield strength of the material is imparted on the target within a microsecond. The severity of the loading causes local plastic deformation, which ultimately results in the development of the favorable residual stresses. Finite element analysis technique was applied to predict the residual stress induced from laser shock peening. The comparison between the simulation and experimental results was carried out and the model was validated subsequently. The results showed that the numerical simulation on laser shock peening was effective for the crankshaft design and parameters optimization.

 Abstract:  The Patch-NAH method possesses advantage in solving engineering problems, and it is especially suitable for reconstructing local sound field to obtain the acoustic parameters. After introducing the origin and basic algorithms of Patch-NAH, Patch-NAH methods are classified into four different types according to innovation extent and applicability of the methods themselves, and then, the principles, developments and current research status of the methods are introduced. The methods include the Fast Fourier Transform-based Patch-NAH, the equivalent source method-based Patch-NAH, the statistically optimized-based Patch-NAH, and the boundary element method-based Patch-NAH. Finally, the developing trend around Patch-NAH techniques is indicated.

 Abstract:  To remove the effects of interferential signal on automobile wheel speed signal and guarantee the effectual control of ABS, this paper made use of the non-linear mapping capability of BP neural network, and established a BP neural network model from input signal to export signal by learning from normal signal filtering samples (obtained from wavelet transform). This model could store and memorize filtering process through weight values and thresholds, and then signal filtering and processing could be realized through the envision of the neural network. Finally, the simulated results proved that the model is valid and suitable.

 Abstract:  An entire vehicle model with two degrees of freedom was developed for steer-by-wire system. Two types of active steering control strategies, constant steering gain type and yaw rate feedback type, were studied respectively. The simulation results show that the former strategy can keep constant steering gain and decrease driver workload, but can't change system poles; the latter strategy can increase system damp and bandwidth to improve the handling stability.

 Abstract:  In order to demonstrate the effects, the uneven road profile was taken into account and a vehicle model was developed with the consideration of uneven road profile. The effects of uneven road profile were realized by the application of stochastic four-wheel road uneven input. Finally, in conjunction with the conventional ABS logic threshold control strategy, a simulation was conducted to analyze the effects of uneven road profile on the braking performance of automobiles equipped with ABS. It is shown through the simulation results that the effects are obvious. It is viable to design more effective ABS control strategy based on the results.

 Abstract:  In the research of optimal operation line control strategy of parallel hybrid electric vehicle (PHEV), engine is often considered as the primary object. It can improve vehicle's fuel economy with engine working on optimal operation line, but motor's operation efficiency is not always the best. Motor, as another power source of HEV, was the primary object. The motor optimal efficiency line was designed, and the corresponding control strategy was established subsequently. Contrasted with the simulation results of the logic threshold value control strategy, motor optimal operation line control strategy could decrease vehicle's fuel economy by 9.5%, and could increase motor's operation efficiency by 23%.

 Abstract:  Based on pilot fuel spray and mix, combustion chemical reaction kinetic, combustion calculation theory, turbulent flow, NOx formation model, initial and boundary conditions and meshes creation, a three dimension combustion model of a biogas diesel dual-fuel engine was established in this paper. The combustion process in the biogas diesel dual-fuel engine was simulated subsequently. The biogas was made from many kinds of agricultural and forestry residues by a gasifier. The dual-fuel engine was rebuilt by a single cylinder, four-stroke, water cooled, and direct injection diesel engine. The biogas was induced to the cylinder through intake tube of the engine during intake process and ignited by diesel fuel. The simulation results were compared and analyzed with the experimental data of a biogas (made from shavings)diesel dual fuel engine, and the simulated characteristics of combustion pressure and NOx emissions were in consistency with the experimental ones.

 Abstract:  When spray is injected form multi-hole nozzle, oil bundle is impinged on the inner conical-face orientation sleeve mounted on the outside of nozzle and diffuses along the cone-shape surface, and then the conical spray is formed. The impingement quantity of spray can be adjusted by changing the relative position between nozzle hole and impingement surface. Three-dimensional CFD package AVL FIRE 8.4 is used to simulate and analyze the diffusion characteristics of full-impingement conical spray, half-impingement conical spray and multi-hole free spray. The simulated results show that: comparing with free spray, inner conical-face impingement type conical spray has the characteristics of high diffusion and homogeneous circumferential dispersion. Combustion performance test, which is carried out on 135-type single-cylinder diesel engine, shows the following conclusions: half-impingement mode is better than whole-impingement mode; for half-impingement mode, 4-hole nozzle is better than 6-hole nozzle; appropriate fuel supply advance angle is good for achieving hot premixed combustion.

 Abstract:  Based on the analysis of unit pump control principle, the hardware and software were designed according to high real-time performance of injection system on diesel engine. Accurate and real-time injection control was realized by using engine position synchronization (EPS) and angle clock conversion concept. The highest injection accuracy is reached to 0.0234 degree of crank angle, solenoid valve peak current is 12 A and solenoid valve hold current is 8 A. The experimental results show that the whole system can control injection accurately and includes backup function of crankshaft signal.

 Abstract:  Changing the advanced ignition angle by rotating the distributor housing, the effects of ignition timing on M20 and E20(20% methanol and ethanol by volume) alcohol-gasoline blends fuelled SI engine performance and exhaust emissions were experimentally investigated. The experimental results show that, compared with gasoline, M20 and E20 fuel blends advance the maximum burning pressure point by 1°CA (crank angle) and 0.5°CA, and the optimal ignition timing by about 2°CA and 1°CA respectively. The effects of ignition timing on engine power, fuel economy and exhaust emissions characteristics of two blends are similar. With the advance of ignition timing, engine power and brake torque increase, brake-specific energy consumption (BSEC, Bsec) decreases and the thermal efficiency is improved, however, CO, HC and NOx emissions are enhanced.

 Abstract:  Based on CCP protocol, a calibration platform for GD-1 calibration system was developed. The USB interface of PC realized accurate and reliable communication with ECU by USBCAN intelligent transfer board. Using LabVIEW and VC mixed programming technology, a friendly interface was provided and CCP driver was developed. Data acquisition, display, saving and calibration became easier on the calibration platform.

 Abstract:  Do not take into account the influence of wind velocity, many semi-empirical and semi-theoretical formulas are proposed to solve the nozzle rotational sprinkler range. But in practically occasions, water-drop trajectories, velocities and range are altered by wind. Based on Newton's second law and aerodynamics principle, taking into account the wind velocity on the droplet travel, a 3D theoretical model for the irrigation sprinkler nozzle range was established. Then, the model was tested and consequently compared with field experiments and other authors' formulas results. The results show a very good agreement for most cases, and the model is applicable to all other kinds of sprinklers. The average relative error is 8%, which is greatly below that of other formulas.

 Abstract:  With the method of human-computer interaction based on visualization, the optimization design of the separating-planting mechanism of rice transplanter was carried out. The mathematic model of the mechanism was established, and the optimization program with human-computer interaction based on visualization was compiled subsequently. Then, the influence of every parameter on the optimization object and restriction could be found out. Therefore, the mechanism's structural parameters, which satisfy the requirements of separating and planting seedlings, could be optimized easily through the interaction of human-computer. The results showed that this method was suitable, and it could improve the efficiency of optimization notably.

 Abstract:  In order to resolve the corn harvest problem on different row-spaces, a 4YZ180 model corn-harvester with regardless of row was developed. The orthogonal experimental study was conducted to validate the adaptability of the crop divider in corn field, which was based on 3 factors and 3 levels, namely, velocity of machine, ground clearance of the crop divider cusp, and angle formed by crop divider plane and ground. The experimental results indicated that the crop divider of this machine had good adaptability. The sequence of 3 factors and the relations of factors and targets were analyzed subsequently, and the optimal project was obtained. The analysis results are of significance to the operation of the machine.

 Abstract:  Based on Danckwerts theory of reaction and mass transfer, using a gas-liquid flow, the interfacial surface per volume in cyclone reactor was determined by chemical absorption. According to the experimental results, the interface area was increased with the cascade density and the kinetic energy factor, furthermore, the relationship of interfacial surface per volume against kinetic energy factor and cascade desity was obtained. As a new type of absorber, cyclone reactor has simple structure and convenient installation. The interfacial surface per volume is higher than that of helical rotating absorber and whirlpool tower plates.

 Abstract:  Rapeseeds drying in a spouted bed with rotating draft tube (RDTSB) was studied to obtain the dryer's drying characteristics. Taking the heat consumption per kilogram water as the criterion, the 51-88 m3/h air flow rate (101.3 kPa, 0°C), 80-110°C hot air temperature, 10-30 kg rapeseed load quantity and 40-80 mm distance between draft tube and spouted tube, the drying experiments were tested respectively. On the basis of these test results and the practical conditions, a scheme of orthogonal test with 3 factors and 3 levels was designed. The optimum drying parameters on the present apparatus were normal air flow rate at 58 m3/h, hot air temperature at 80°C and wet rapeseed load at 20 kg. The optimum heat consumption per kilogram water was 3941.4 kJ and the factor of air flow rate was significant only. By calculating with SPSS, the regression equation of heat consumption per kilogram water against hot air temperature, air flow rate and rapeseed load quantity was obtained.

 Abstract:  Rice production is one of the most important issues in food supplies production in China, and the planting and harvesting mechanization are two important sectors in rice production mechanization. The status of rice planting and harvesting mechanization, and the feasibility to develop rice planting and harvesting mechanization in south China were analyzed. In addition, the developing targets of rice planting mechanization in south China were proposed. The requirements for rice planter, harvester and the funding to realize the targets were analyzed subsequently. At last, there strategies were put forward to support the developing of planting mechanization.

 Abstract:  To explore the effectiveness of heat treatment on quality maintenance of bamboo shoot (Phyllostachys vivax McClure. cv. Huapuji), lightly processed bamboo shoots were dipped in water at either 20°C, 40°C, 45°C or 50°C for 5 min before stored at 10°C for 6 days. The experimental results indicated that the respiration rate and ethylene production were decreased, while the activities of phenylalanine ammonia lyase (PAL), polyphenol oxidase (PPO) and peroxidase (POD) increased quickly, and it led to accumulation of total phenolic compounds, thereby promoting L decrease and browning index (BI) increase. Heat treatments at 40°C or 45°C for 5 min reduced the respiratory rate and ethylene production, inhibited the activities of PAL, PPO and POD, and maintained higher level of L and lower level of BI. Therefore, these two temperature treatments have potential use in lightly processed bamboo shoots storage. However, the treatment at 50°C for 5 min, had no beneficial effects on maintaining quality in lightly processed bamboo shoots because of the heat injury.
