    针对传统绿茶杀青理条过程中因传热效率低、锅槽结构存在局限而导致茶叶运动特性受限、受热不均,茶叶易出现局部焦糊、杀青不彻底、成条松散、色泽暗淡等问题,设计了一种高温高频异形锅槽杀青理条机,研究在高温热风加热条件下茶叶在高频往复振动异形锅槽内各阶段的运动规律和受力特点,确定影响茶叶杀青理条效果的关键因素。根据设计目标,分析计算得出关键工作参数范围:锅槽往复运动频率范围为4.66~6.00Hz,理条夹角范围为40°~50°,热风加热温度范围为300~360℃,并利用Rocky DEM 建立茶叶杀青理条仿真模型,确定最优作业参数组合。在仿真结果的基础上,利用试验样机开展三因素三水平正交试验,以成条率和碎茶率为评价指标,通过Design-Expert 13对关键参数的数学模型进行优化求解。结果显示,最佳工作参数组合为:锅槽往复运动频率5.34Hz、理条夹角46.2°、热风加热温度329.2℃,此时成条率为90.91% ,碎茶率为1.22% 。最佳参数验证试验结果表明,成条率与碎茶率分别达到88.96%、1.27%,与优化结果的相对误差均在5%以内,显示了优化结果具有很好的可靠性和精度。

    Abstract:

    Aiming to address the problems encountered in the conventional green tea fixation and shaping process, including restricted tea-leaf movement and uneven heat distribution caused by low heat-transfer efficiency and structural limitations of traditional troughs, which often lead to local scorching, incomplete fixation, loose strip formation, and dull leaf color, a high-temperature, high-frequency fixation and shaping machine equipped with a specially shaped trough was developed. The movement behavior and force characteristics of tea leaves at different processing stages within the high-frequency reciprocating specially shaped trough under high-temperature hot-air heating conditions were investigated to identify the key factors affecting fixation and shaping performance. Based on the design objectives, the operating parameter ranges were determined through theoretical analysis and calculations, with the reciprocating frequency of the trough ranging of 4.66~6.00 Hz, the shaping angled from 40° to 50°, and the hot-air temperature ranged from 300℃ to 360℃. A discrete element simulation model of the fixation and shaping process was established by using Rocky DEM to determine the optimal combination of operating parameters. Based on the simulation results, a three-factor, three-level orthogonal experiment was conducted by using a prototype machine, with strip formation rate and broken tea rate selected as evaluation indices. The mathematical models of the key parameters were optimized by using Design-Expert 13. The results showed that the optimal operating parameter combination consisted of a reciprocating frequency of 5.34 Hz, a shaping angle of 46.2°, and a hot-air temperature of 329.2℃, under which the strip formation rate reached 90.91% and the broken tea rate was 1.22%. Validation experiments conducted under the optimized conditions yielded a strip formation rate of 88.96% and a broken tea rate of 1.27%, with relative errors of less than 5% compared with the predicted values, demonstrating the high reliability and accuracy of the optimization results. The research result can provide a theoretical basis and technical reference for the design and optimization of fixation and shaping machines for premium green tea production.
