Gelatinizing Properties of Stored Milled Rice under  Typical Storage Conditions

    Abstract:

    In order to investigate the stored rice quality changes and its impact factors, the commercial milled Indica rice was used as the raw material. By using programmable artificial climate chamber, the simulation storage temperature and humidity parameters were set as 15℃ without relative humidity (RH) controlling; 15℃, RH 75%; 20℃, RH 65%;25℃, RH 65%; 30℃, RH 80% and natural storage without temperature and humidity controlling according to the typical average temperature and humidity of China grain storage regions. The gelatinizing characteristic values were periodically determinated, and the results showed that the peak viscosity (PV), final viscosity (FV) and hold viscosity (HV) had a increasing trend as the storage time extended, the change of setback (SB) value was slight in the early storage period, but in the later storage period, the changes in both normal temperature and high temperature storage conditions had increasing trends, while in low temperature or quasi-low temperature storage had decreasing trends. Storage time was significantly correlated with PV, FV and HV respectively. The effects of storage conditions on PV, FV and HV were not significant in the early storage period, but significant in the later storage period.
