    摘要:

    设计了一套智能化超高压食品加工设备,分析并确定了水介质增压器、单向阀、卸压阀、容器密封和温控系统的结构和相关参数。试验表明,整机结构合理、操作方便、性能稳定、安全可靠。利用该设备在600MPa处理鲜榨桃汁5min,产品符合商业无菌要求。

    Abstract:

    The design principle of automatic high hydrostatic pressure equipment, its structural characteristics and major technical difficulties were introduced. The structure and the optimum parameters of high pressure intensifier, check valve, relief valve, sealing system and temperature sensor system were studied and confirmed. The results of performance test prove that it has the advantages of reasonable structure, easy operation, steady performance and reliable security. Furthermore, several batches of fresh peach juice were processed by using this equipment, and the results showed that commercial sterilization was achieved after treated by HHP at 600MPa for 5min.
